Transporting Your Cake

  • Always carry the cake box flat, from the base β€” never by the sides or ribbon.
  • Place it on a flat surface in the car (footwell or boot floor), never on a seat or a lap.
  • Drive gently and keep the air conditioning on β€” heat is a cake's worst enemy.

Storing Your Cake

  • Refrigerate your cake as soon as possible, in its box, away from strong-smelling foods.
  • Buttercream and ganache cakes keep for 3–4 days refrigerated.
  • Cream and fresh-fruit cakes are best enjoyed within 48 hours.
  • Bread and pastries are best on the day; freeze bread up to 1 month, well-wrapped.

Serving Your Cake

  • Remove the cake from the fridge 30–60 minutes before serving for the softest crumb and fullest flavour.
  • Remove any non-edible decorations, dowels (in tiered cakes), toppers and wires before cutting.
  • Use a long, thin knife dipped in hot water and wiped between cuts for clean slices.

Leftovers

Wrap cut edges with cling film and refrigerate in an airtight container. Cake slices also freeze beautifully for up to a month β€” a delicious future surprise!
